I don’t like eating alone so almost every night I cook dinner for a friend and me. She does the dishes so the arrangement works out perfectly. The other night I made Szechuan Pork Loin and we had fresh corn on the cob. We had fresh golden pineapple for dessert. I thought I’d share the simple recipe for the pork.
Szechuan Pork Loin
Rub a pork loin with House of Tsang Szechuan Spicy Stir-Fry Sauce (the sauce can be found in the Asian section of the supermarket). Wrap pork up in plastic wrap and place in a roasting pan or glass dish in the refrigerator. Allow pork to marinate for about an hour.
Preheat oven to 425 degrees. Bake for 20-30 minutes per pound. Use a meat thermometer to check the internal temperature of the meat, which should be 160-165 degrees.
Our pork loin was tender and moist. We had enough meat for dinner and leftovers the next day.
